Which dice can I roll?

Any of them. The usual tabletop set of d4, d6, d8, d10, d12 and d20 is covered, and you can set any other number of sides.

What does a modifier do?

It is added to the total after the dice are rolled. A notation such as 2d6+3 means roll two six-sided dice and add three to the sum.

Are the rolls fair?

Every face has the same probability. Unlike a physical die, a virtual one has no chipped corner and no favourite side.
